We are currently building the recipe for our upcoming daily-drinker, Flowstate. To get there, we run test flights on the roaster to see how the beans react to heat.
For this specific 800g production run, we gave the roaster a massive thermal battery and hit the gas. The beans soaked up the heat and flew through the roast, hitting First Crack in under 8 minutes and landing at a 67.1 color score.
What does that mean for your cup? It means this coffee is a sprinter. Because it roasted fast, it preserved a lot of the bright, organic acids in the bean.

This is a Colombian lot from Finca Milán in Betulia, Risaralda, and it’s naturally fruity and sweet. The farmers use a wild “culturing” fermentation that brings out a big, layered sweetness, so you’ll taste juicy guava, a little vanilla creaminess, and a smooth blackberry finish.
